Real engine dynos do an entire pull at full throttle by loading the engine fully and gradually raising the RPM that the dyno will allow the engine to spin at, it would be cool to see a simulated load option/have the automatic test simulate load in the dyno screen, rather than having the engine immediately bounce off the limiter at full throttle

No, the automatic one has a constant load and raises the throttle slowly.
A good example of what I’m talking about is this video, the engine is at full throttle before the run even starts, and the whole run from 3000-8500 rpm is done at full throttle.
Here’s an even better example from the same video, where you can even see the throttle valve fully open throughout the pull.
