Well, my thought was on something a bit more elaborate ie: multiple air chambers along the length of the barrel so rather than a huge blast of air at once which would likely explode the pumpkin, you would have sequential boosts as it travels up. Someone good with computers and electronics would be helpful in this regard. As far as your present resources go, I’m tempted to work with potatoes.

Optical timing with infrared and a microcontroller driving solenoids would give that possibility. I’d be tempted more by a two-stage design, an initial blast designed to get the projectile moving, followed by the high-pressure blast halfway up the barrel. Hardest part would be fitting the sensors and sealing the barrel around them to avoid those being an air-leak.
That, and using metal as an air-tank instead of PVC. PVC likes to explode and become tiny bits of shrapnel when overpressurized.
