I would really like to see 1 and 2 cylinder engines in the game

Check the FAQ. If anything, these will be DLC after the game is released.

I really hope that if they do go with that post-release DLC they include V twins and not just inline and boxer twins, because honestly the data they can find on V twins leaves little reason not to include them.
